This Covid-era bar – opened in the middle of 2020 – has faced its share of challenges, but has established itself as one of the cocktail spots to visit in Sapporo, on Japan’s Hokkaido Island. When it comes to drinks, there’s definitely a leaning towards the classics in general, with a real interest in drinking history, with a selection of vintage bottles, such as a 1950s bottle of Italian amaro. There’s absinthe served the traditional way, and a cocktail list, entitled Remedy & Cures, with plenty to choose from. There are twists on classics, like the Mezcal Negroni and Solstice Negroni, the latter made with gin, plum brandy, Kina Liqueur and orange bitters.
