The signage outside Memento Mori, located inside the Yokocho food hall in the Toranomon Hills tower in Tokyo, reads simply 'Cacao & mixology' as a clear indicator of what's to come inside. There, acclaimed bartender Shuzo Nagumo has infused the drinks offering with the history and flavors of cacao from top to bottom; not just hot chocolates and spirits infusions, but also outside-the-box ingredients like fermented cacao syrup and cacao pulp kombucha. The sustainability-minded programme repurposes ingredients to minimise waste, and works with fair-trade companies who source cacao directly from growers in Colombia, like Maison Cacao and Cacao Hunters. Naturally, chocolate treats are also offered to pair with the cocktails. And despite its somewhat macabre name, the interiors are quite romantic during the late afternoon and throughout the evening, with soft flowing curtains and lavish dried-flower arrangements adding an otherworldly elegance to the space.
