Shuzo Nagumo is a rising star in Japanese bartending, and his talent is manifest at Mixology Salon, located atop the tawny Ginza Six shopping mall. The tiny, minimal space, seating just eight, serves up what are being called ‘teatails’, focusing on flavours such as gyokuro, oolong and hojicha. Cocktails here are centred around tea — think a Green Tea Old Fashioned — and are available individually or in several-course tasting menus. Despite the delicate setting and glassware, the bar is relaxed and welcoming.
