Tender is not a sneakers and jeans kind of joint. This being the place to watch legendary bartender – and sartorially sublime – Kazuo Uyeda in action. Uyeda is responsible for the 'Hard Shake', a technique that lets the ice roll along the inside of the shaker instead of crashing against its walls, resulting in a smoother, well-aired pour. The intimate, fifth-floor space offers views over upmarket Ginza, though most visitors are more interested in watching the cocktails being created: spirits are poured by eye rather than measured, glassware is pre-chilled, ice hand-carved and presentation superlative.
