Although it’s located in the popular and fashionable Gemmayze neighbourhood of Beirut, Terre remains slightly secreted away amongst a glut of hip bars and restaurants, hidden by leafy plants and trees. The concept of the menu is simple: to support local producers and creatives, from farmers and fisherman to artists and designers. Cue cool pared back interiors and a menu that champions seasonality and homemade techniques such as fermentation and daily fresh pretzel buns and pasta. Signature dishes include a miso glazed full roasted eggplant on a labneh-tahini base with housemade coriander oil, verjus and pickled kohlrabi and a zaatar twist on the classic carbonara with fresh wild thyme and Terre’s own Lebanese dried thyme mix. The cocktails are also excellent. Expect combinations such as the Lebanese Breakfast, which uses mint distillate, black tea, cucumber juice, pita bread, and olives clarified in labneh, or Cold Brew Lemonade: a mix of cold brew coffee, lemon verbena distillate, cinnamon, whey and orange blossom spiked with dark rum. There’s also a small wine list focused on local and international natural wines.
