The angular building reveals stark, dark interiors that ensure the food takes focus. It’s no frills, all flavour. The micro-seasonal kitchen – headed up by Martynas Praškevičius, arguably the country's best chef – sources exclusively Lithuanian produce. Cod beignets with tarragon and beef tartare with marrow, smoked egg yolk and fermented blackcurrants are linchpins. Elsewhere, expect an easy dining ethos, which often swerves cutlery in favour of a hands-on approach.
