The venue is led by Jon Lee, who along with his team, prioritises the essence of the cocktail through five fundamental pillars: alcohol, flavour, taste, body and dilution. By incorporating carefully chosen seasonal ingredients, Penrose's crew creates immaculate libations that pay homage to timeless classics. For example, the makopa martini adds plum and lava salt to its gin and vermouth base.
