With a name that means “place of fire” in Nahuatl, every aspect of this Roma Norte mezcaleria aims to transport guests back to prehispanic times when the sparks of Mexico’s most storied agave spirit first took root. From the surreal decor – the Anagrama design firm aimed to capture the feeling of entering an ancient tomb through the use of monochrome earthy materials and sparse, dramatic mood lighting – to the burning incense and expressive soundtrack, it’s hard not to get caught up in the transportive atmosphere. To honour the integrity of artisanal agave spirits producers, the mezcal is purchased in bulk for the bar and stored away from sight, to allow guests to enjoy each resplendent flavour without getting caught up in marketing schemes. Look for special treasures from many different regions in Mexico, which pair splendidly with the bar snacks. While neat pours are the main attraction, a small list of inventive cocktails is also available.
