Ixi'im is the flagship restaurant at Chablé Yucatán, the much-sought-after hotel located a 45-minute drive from Mérida that holds a coveted spot in The World's 50 Best Hotels ranking. The menu is curated by none other than Jorge Vallejo, the chef behind Quintonil in Mexico City, which has been consistently voted among The World’s 50 Best Restaurants. The hotel’s Mayan gardens provide the herbs, fruits and vegetables for the seasonal menus, overseen by head chef and Quintonil alumnus Luis Ronzón.It’s a destination for the food of course, but there’s a strong story with the site too. In the small rural village of Chocola, Ixi’im took over the former sisal plantation and estate’s former mill – it’s a metal-structured glass creation that aims to give diners the best courtyard and landscape views. It also holds the world’s largest collection of tequila in its wine cellar.
