This modern speakeasy takes inspiration from the Bijou cocktail created by pioneering bartender Harry Johnson, whose New and Improved Bartender's Manual was first published in 1882. The Bijou cocktail features three ‘jewels’: diamond (gin), ruby (vermouth) and emerald (chartreuse). Likewise, Bijou Drinkery Room’s stained-glass bar features clear, ruby and emerald glass panels, plus elegant gem motifs. Johnson would be tickled pink by the Rubik’s Cube Twisted menu, which unlocks new, untried flavour profiles for the bartenders to build upon with every turn of the cube. Equally inventive signature cocktails complete the selection. Velvet curtains, Piet Mondrian-inspired interiors and low lighting bring that debonair speakeasy vibe. If you’re peckish, order some of the moreish bar snacks, from cheese balls to grilled octopus. Bonus points for the hidden arrival: Bijou is tucked away in the Colegio Superior de Gastronomía, with its own secret entrance and exit.
