Chef Thalia Barrios García’s tribute to the traditional foodways of her hometown of San Mateo Yucutindoo (a small village in Oaxaca’s southern mountains) Levadura de Olla is a sincere exploration of the ingredients that make Oaxaca one of the world’s most exciting culinary destinations. Situated in a colonial courtyard, the unpretentious restaurant lets meat-centric dishes take a back seat to vegetable-forward ones (García’s signature tomato dish, featuring various heirloom varieties is as stunning as it is delicious) that range from casual everyday snacks like guacamole, to ceremonial dishes like mole and chicatanas (ants) served with beans and pork. A small selection of beer and cocktails make up the beverage list, but don’t skip out one of the most exciting features - an extensive list of traditional beverages including masa-based drinks, tepache, pulque and other hard-to-find drinks like ticuncho (papalometl agave juice) and kalanca (an herbal tonic).
