Located where icy Atlantinc waves buffet the Lindesnes lighthouse on the most southern tip of Norway, Under is the world’s largest underwater restaurant – 5.5 meters below the surface to be precise. It may look like a concrete container upended in the bay but once down the stairs and inside the oak-cladded dining room it’s a whole different experience. A huge window looks out onto the seabed providing a constantly moving and utterly mesmerising picture of Norwegian sea life. Danish chef Nikolai Ellitsgaard has developed an exciting and innovative 20-course tasting menu that, combined with setting, allows diners to be immersed in the ocean like never before. Naturally heavy on fish and shellfish, he also uses ingredients foraged from nearby shores such as sea grasses and seaweed, as well as local mushrooms, berries and sheep. A spectacular destination for the more intrepid customer – getting there is part of the adventure – and possibly a once in a lifetime experience.
