This Panamanian eatery made a wild entrance to the Latin America’s 50 Best Restaurants list in 2023, pickng up the Highest New Entry Award. Opened in 2022, Cantina del Tigre (translating as ‘tiger’s canteen’) is led by chef Fulvio Miranda, whose artistic talent goes beyond the kitchen, since he is also a bass player and composer.

Miranda uses his creativity to reimagine traditional Panamanian dishes, teasing out flavours that are difficult to find elsewhere. Among the standout items on the à la carte menu are Cebiche de Mamón Chino (rambutan ceviche), red rice, tripe with lobster, and rice tamale with prawn. Vegetarian and vegan diners will find delicious options to choose from, such as cauliflower with hummus and cabbage cooked in butter over celery puree and kale chips. The food is complemented by original cocktails such as pepino (cucumber) mezcal sours and papaya negronis.
