Mai Mai’s Nikkei (Peruvian-Japanese) fusion comes courtesy of its two owners: chef Mario Castrellon, who also helms Maito in Panama City, and Mitsuharu Tsumura, chef at Maido in Lima. Combine the first half of Maito and Maido, lop off a syllable or two and you get the cute name Mai Mai. This cross-cultural combination also results in impressive cocktails and delicious bites, from duck dumplings, ceviche and toasted bao to nigiri, sashimi, sushi and udon. Edible offerings are designed to complement the main attraction: the drinks list, which is the work of lauded bartender Martin Hudak. Try La Mamonita (mezcal, lychee, hibiscus, lime) or the Ave del Paraiso (seven-year-old rum, Campari, palo santo, pineapple, coconut, lime). Connoisseurs will also appreciate the impressive selection of piscos and Japanese whisky. Set in the Panamá Design Center, the rooftop space is dark and elegant, with flickering candles, vibrant afrobeats, hip staff and a glamorous crowd. Dress to impress.
