At chef Virgilio Martinez’s Lima restaurant Central, named Latin America's Best Restaurant on two occasions, the food is understandably the main event. But in the same building, at sister venue Mayo, cocktails have their time to shine. This comedor y coctelería maintains the same approach to the culinary arts, creating a number of in-house distillates and ferments, served in a casual setting. The cocktails at Mayo, and indeed Martinez’s accompanying dishes, shine a contemporary light on Peruvian heritage, while making the most of local ingredients. The bar’s namesake drinks for example, simply combines gin, hibiscus and cedron, or lemon verbena.
