The father of Philippine speakeasies, Blind Pig opened back in 2011, inspired by New York’s original Milk & Honey. Taking that cue, the inside is just as dimly lit, with vintage decorations and soft background music drawing drinkers into the illusion of a time warp. Credited as igniting Manila’s interest in craft cocktails, drinks stay true to classic foundations, but bartenders here are known and loved for being able to create on the spot and at the behest of their guests.
