The inspiration for Southbank Cafe + Lounge, located in the heart of Metro Manila, comes from the gastronomic hub that is Melbourne. No surprise, then, that it offers the best in wine, coffee and cuisine, not to mention cocktails. The approach to drinks here is decidedly modern, making use of the latest techniques and ingredients, which are described in an accessible way via a beautifully illustrated menu. The Strawyo Haze is a case in point, with a strawberry distillate joined by both citric and malic acids, topped with tonic water and garnished with a flower and lemon peel. Guests are also encouraged to request a bespoke creation made using in-house ingredients, or alternatively to stick with the classics. The extensive food menu, meanwhile, features all-day breakfast as well as a selection of mains drawing influence from around the world. From this original Muntinlupa City location, Southbank has since expanded to Estancia at Manila’s Capitol Commons.
