Whole roast pig, bubbling cauldrons of stew and hearty pies… traditional Filipino food is designed to feed a crowd which makes Thirdy Doltare, Kevin Villarica and Kevin Navoa’s concept of distilling it into eight tiny courses particularly impressive. This ambitious trio of chefs are on a mission to put Filipino food on the culinary map. Their headquarters? A slightly non-descript 42-seater behind a congee shop on Katipunan Avenue. Their menu? A boundary defying romp through the Philippines’ tropical ecosystems and the combined memories of an entire team of local chefs. The results are electric. Laing (taro leaves in coconut milk) traditionally served like a porridge is alchemised into neat spheres topped with squid ink and microherbs. Kamote (deep-fried sweet potato) appears in a fermented version. A signature appetiser is presented like lunchbox filled with chichirya (junkfood snacks popular with Filipino kids in the 90s). Expect familiar flavours genuinely treated in an imaginative way – the makings of a very memorable evening.
