This ambitious trio of chefs are on a mission to put Filipino food on the culinary map. Their headquarters? A slightly non-descript 42-seater behind a congee shop on Katipunan Avenue. Their menu? A boundary defying romp through the Philippines’ tropical ecosystems and the combined memories of an entire team of local chefs. The results are electric.
