Housed in a former palace – now the luxurious Bella Vista Hotel & Spa – Vista Restaurante is a must for travellers in the port city of Portimão. Added as part of an extensive renovation, the light-filled restaurant is overseen by chef João Oliveira who, in 2015, elevated the offering with a razor-sharp focus on local and seasonal cuisine. There are two menus: Vista – an homage to the Atlantic, with dishes built on succulent local seafood such as shrimp from Sotavento, squid from Torneira, langoustine from Sagres and anchovies from Portimão; and Terra, where vegetable carbonara, courgette flowers, Algarve oranges and carrot concotions show that vegetarians are far from an afterthought in dishes as creative as their fish-forward counterparts.
