Located inside the luxury Penha Longa Resort and with a view of the Sintra Mountains, Midori (meaning 'green' in Japanese) is Portugal's first Michelin-starred Japanese restaurant, a celebration of local produce prepared using authentic Japanese techniques. The seven-course ‘Kiri’ tasting menu and the nine-course ‘Yama’ are kaleidescopic in their flavour combinations, featuring moreish nigiris made with John Dory, smoked akami with muxama and Japanese charcoal-seared toro, as well as beef tongue kakuni with smoked aubergine and tomato mustard and codfish with Dengaku cabbage and pilpil.
