At the helm is Sri Lanka-born chef Gaushan De Silva, whose first cooking lessons took place under the watchful eye of his grandmother, and whose career has included a stint as private chef for the Queen of Jordan. De Silva’s sustainable approach to sourcing high-quality, organic ingredients meets a true flair for artistic presentation, as evidenced in dishes such as Tuna Egg Yolk – yellowfin tuna from the surrounding ocean and a local egg yolk cooked and displayed to perfection.
