Velaa Private Island’s fine-diner, the overwater Aragu, boasts a spectacular marine-themed 36-cover dining room in dazzling shades of blue and gold. Serving up European-Asian menus of distinction, it is the first and only establishment in the Maldives to have made it intothe extended 51-100 section of Asia's 50 Best Restaurants list. At the helm is Sri Lanka-born chef Gaushan De Silva, whose first cooking lessons took place under the watchful eye of his grandmother, and whose career has included a stint as private chef for the Queen of Jordan. De Silva’s sustainable approach to sourcing high-quality, organic ingredients meets a true flair for artistic presentation, as evidenced in dishes such as Tuna Egg Yolk – yellowfin tuna from the surrounding ocean and a local egg yolk cooked and displayed to perfection.
