Slovenia’s spectacular Julian Alps form the backdrop to boutique hotel Milka’s eponymous lakeside restaurant, which scooped a Michelin star within three months of its 2022 opening. Designed by Ljubljana-based Gartner Lifecycle Architecture, the dining room sports warm, local wood and contrasting dove-grey seating, with wildflowers picked in the surrounding meadows gracing tables. Led by passionate young chef David Žefran, the tasting menu places the emphasis on sustainable, foraged and fermented ingredients with trout, crayfish, venison, mountain vegetables and cheeses, edible flowers and bee pollen all making appearances. Representative is the “Beetroot”, which is steamed and pickled with spruce branches, then served with a luxurious sauce made from bear fat spread, fig leaf oil and a generous dollop of Oscietra caviar. Three drinks-pairing options cover native wines, house-made juices and, with the “Our Story” combo, cocktails, sakes and beers. It’s worth booking a room for the night: breakfast here matches dinner in both its ambition and execution.
