At countryside restaurant Hiša Denk in east Slovenia, there is no menu. Instead, head chef Gregor Vračko lets the changes of the season guide him in creating Styrian-influenced dishes served in reasonably priced multi-course tasters. The modernist restaurant is situated between two wine roads, Austrian South Styria and Mariborsko Pohorje, giving way to a list with lots of local varieties. Dining leisurely here can take at least three hours. And in case it’s too late to drive home, Hiša Denk is also a guest house with six modern rooms starting at $100 a night.
