Set within its own boutique hotel in the old town of Cáceres, Atrio is the platform for Juan Antonio Pérez’s consistently top-notch cuisine and a superb wine list curated by fellow owner José Polo. Combining European techniques with local ingredients, Pérez interprets traditional into modern in dishes such as ‘cheese and ham’ cut into an intricate pig shape or a truffle puff pastry roll. There are two tasting menus, one focused on Iberian pork and the other on seafood. The restaurant’s pride and joy is an 1806 bottle of Château d’Yquem worth more than $300,000.
