Its single, 15-course tasting menu an ode to the bounty of the surrounding land and sea, the tiny, 15-seater Bagá opened in 2017. A year later, it became the first restaurant in Jaén province to win a Michelin star, which it has held onto ever since. This is down to the passion and skill of head chef Pedro Sánchez, whose seasonally led dishes have inspired food lovers from around the world to make a pilgrimage to his simple dining room, with its three tables and four places at the bar. None of Sánchez’ creations happen by chance. A bottarga appetiser pairs sweet local orange, sliced, then dehydrated and served with the salty tang of a grated mullet roe bottarga; his pear and smoked eel sees the fermented, oxidised fruit reduced to a prune-coloured skin then served atop an eel skin foam. White and sparkling wines make up 90% of the wine list and provide the perfect complement to Sánchez’ delicacies.
