Floor-to-ceiling windows ensure your sea view remains intact within, providing a glorious backdrop from the gourmet cuisine that emerges from the pass. Chef Javier Olleros worked with some of Spain’s greats – Toñi Vicente, Martín Berasategui, Marcelo Tejedor – before striking out alone over a decade ago. A generous kitchen garden flanks the minimalist cube of a building and fuels the menu, while the seafood comes direct from beds you can see from the table – everything else is sourced from under a kilometre away. Over six to 13 courses expect a bona fide taste of Green Spain. Artfully plates, simple in concept, bites like garden herbs, wheat and flax and ‘Vilanova’s’ onion in a salty broth with aromatic oil belie their complex flavour and Olleros’ expert hand. Local wines stand out on the house list, just as you’d expect.
