Sitting in Valencia's buzzy Ruzafa neighborhood, Fierro's creative energy mirrors that of the surrounding neighborhood thanks to the imaginative minds of Argentinian chefs Carito Lourenço and Germán Carrizo, who have now made the Spanish coastal city their home. The duo likes to push boundaries in their research and development lab by trying out new flavors and techniques, but ultimately the cooking is about creating emotions, long-lasting memories and telling a personal story which connects each dish to Lourenço's and Carrizo's childhoods, the Mediterranean, and closer to home, the vast natural ecosystem of the nearby Albuféra natural park. With this in mind, it makes sense that the three tasting menus, which are named Emotion and Evocation and sit alongside an entirely plant-based option, are served up in an intimate 12-seat space so guests can truly immerse themselves in the Fierro experience.
