Today, Luis Alberto Lera is on the pass, bringing with him a wealth of knowledge and desire to maintain a sense of culinary legacy, while merging modern technique into proceedings. Drawing from the rich natural larder right outside his door, it’s a hotbed for epicureans, with the signature Pichón Bravío de Tierra de Campos acting as much as lesson in regional culture as it does a gastronomic delight. Game season runs from October through to March, and is backed by local mainstays like Castilian suckling lamb outside of those months. Lunch will see the dining room in its best light, but don’t worry, there are nine bedrooms on hand for those who wish to enjoy the wine list.
