Aira’s harbourfront pitch on Djurgården island is apt, Tommy Myllymäki’s cuisine is driven by the water and backed by Sweden’s natural larder. Enter through the open kitchen for a snapshot of what’s to come. Designed to look like a boat house, the super-modern, barn-like architecture sees latticed windows, a mirrored facade and tall all-glass divides swathed in wave-like drapes frame the scene, casting a natural spotlight on Myllymäki’s gorgeously clean, crisp presentation. Moving with the seasons, the well-balanced menu champions Nordic tradition seasoned with global influence. For starters, imagine poached langoustine with hibiscus, tomato and basil, followed by smoked Arctic char with ceps and chicken broth perhaps, or charcoal-grilled lamb with cabbage and ‘nduja. It’s interspersed by veggie dishes light and rich and bookended by the likes of plums with koji, lilac, elderflower and gooseberries – the Swedish landscape made manifest. Elegant petit fours, coffees and digestifs follow in separate, equally divine lounge area, while a lovely terrace is an added bonus, when the weather allows.
