The clue’s in the name with this one: an artist-owned restaurant in Stockholm whose passion for Brutalist architecture (renowned for its linear and blockish aesthetic) extends to the food he serves with the two menus named Brutal or Total Brutal. In layman’s terms, that means pared-back cuisine with ingredients presented with minimal interference or accompaniments, save for the addition of water and salt. Sometimes, a single ingredient is divided and cooked in different ways, then added back onto the plate. It’s high concept, but it works a treat with truly exceptional produce served with an emphasis on flavour. As you’d expect, the interiors are simple but surprisingly intimate.
