From the window of Herz in Switzerland’s Basel you can see the copper stills of the distillery that supplies many of the spirits that are shaken into this neighbourhood bar’s cocktails. It’s a reminder of the local-first approach here, which extends to the other ingredients used, which are sourced from the local region and often foraged by the bar’s owners – think elderberries in summer, rosehips in autumn and chestnuts in the winter. This bounty is used to create a compelling, seasonally-changing menu that features aperitifs and highballs alongside signature cocktails, alongside bar food such as brioche hot dogs and kimchi grilled-cheese sliders. All of this is presented in an old 19th century building set within the remains of the city’s old town wall, parts of which can be seen within the bar itself.
