Superstar chef Andreas Caminada’s third restaurant – opened in 2012 within the old coach house of Schloss Schauenstein – derives from the Romansh word for “today”, in a nod to the restaurant's very literal take on contemporary cuisine. Led by head chef Simeon Nikolov, the restaurant offers a nine-course vegetarian “ode to spontaneity” – a carefully crafted menu based on seasonal ingredients sourced from the nearby permaculture garden. Diners are invited to sit around the horseshoe-shaped kitchen, interacting with chefs as they prepare elegant, fresh dishes that celebrate the Graubünden region's natural bounty. The menu shifts with micro-seasons: winter dishes douse mountain potatoes in onion consommé, spring sees bowls of jalapeño ice cream hidden beneath drifts of frozen dill blossom, and summer features 24-herb salads crowned with nasturtium flowers. A sense of responsibility to the region is keenly felt here, not just in the kitchen's zero-waste kitchen and composting efforts, but a small donation is added to the menu price to support a non-profit that nurtures young culinary talent.
