Superstar chef Sven Wassmer was always going to bring his A-game to this restaurant, set within Grand Resort Bad Ragaz, and with Andreas Caminada’s lauded Igniv for a neighbour. Wassmer worked under Caminda at his flagship, Schloss Schauenstein, before moving on to another two-star establishment in the Vals resort. Clearly rooted in the Swiss Alps, his approach is driven by the natural world, following micro-seasons and channelling nostalgia into a modern, pared-back cuisine that speaks of the great outdoors. He invites guest to ‘Taste again, as if you’ve never tasted before’. Within a dazzling fine-dining space that plays on the theme – stonework, abundant wood – the menu plays out over seven, nine or 11 courses. That might include his take on raclette – a refined dish of confit mountain potatoes in brown butter with Gruyère and truffle, or maybe pike perch with preserved lemon and fermented Jerusalem artichoke, or char with burnt crème and fir. The country’s cooking has absorbed influences from global travels, too, such as in the use of cooking over fire, harnessing primal flavour. As the name suggests, this is food channels and unlocks memories of and creates new ones for destination diners.
