Whether you’re in the artistically refined dining room or perched at the Chef’s Table, you can expect a four- to six-course gastronomic adventure. That might be tuna and Icelandic sea urchins with caviar, sweet potato and passion fruit, or the restaurant’s own farm-fresh beef carpaccio with onion, or Bühler plums with pistachio, cacao and red shiso. European – mostly Swiss and German – wines supplement proceedings, but don’t let that stop you rounding things off with a tipple at the hotel’s excellent bar afterwards.
