Den Kushi Flori

Sleek and minimal, Den Kushi Flori in Bangkok is the brainchild of Japanese chefs Zaiyu Hasegawa and Hiroyasu Kawate and comprises a simple U-shaped counter wrapped around a theatrical open kitchen. The two tasting menus – six courses at lunch and nine for dinner – are a fusion of Japanese and French ingredients and techniques. Like the Tokyo outpost, everything is served as an omakase experience, with chef Susumu Shimizu talking you through courses. Plates have included the likes of fromage blanc with ponzu sauce and three-coloured seaweed; fried crab tofu with bisque and tempura persimmon; and clay-pot rice with Japanese sweetcorn and wagyu beef carpaccio.
