Inddee is a gastronomic ode to India’s diversity, transplanted to Thailand. Head chef Sachin Poojary crafts seven or nine- course tasting menus that showcase his home country’s dizzying array of flavours, sourced everywhere from Kashmir to Kerala. Tucked down a side alley, this sexily lit restaurant spans two floors of a 100-year-old townhouse, with tables transitioning from lofty, cathedral-like internal dining rooms to a verdant garden dramatically illuminated by renowned light architect Matteo Messervy. Soft tendrils of artificial mist sweep across the waxy leaves of a mango tree, while feathered ferns cocoon diners from the bustling city beyond.The menu changes regularly and incorporates indigenous Indian ingredients, featuring plates like black cod coated in spicy, citrusy kasundi (a Bengali fermented mustard marinade), and a cooling yoghurt falooda (a Mughalai dessert). It’s a playful, intelligent menu that’s not afraid to explore the subcontinent’s turbulent history, with a past course named 'When the Portuguese came…' considering external influences on the Indian cuisine.
