Inside the flagship, its tasting menu transforms the same produce into a symphonic celebration of the British seasons, delivered with pinpoint precision and technical flair through the vision of executive chef Paul Burgalières. Dishes change in tandem with the farm’s crop output, but classics such as the aged-cheese pudding caramelised in birch sap and the namesake Anvil dessert – the English translation of ‘L’Enclume’ – have remained beloved staples. Other seasonal courses, such as the summer rainbow chard in ramson butter with toasted buckwheat and soft yolk, shine just as bright of a light on the tasty terroir.
