In England's far north-east, Summerhouse’s The Raby Hunt is set in an 1899-built inn where the hunt used to meet. Owned and run by British chef James Close, the simple dining room – other than for a glass skull embedded in the floor – is the setting for a tasting menu of 15-17 courses, with The Kitchen Table providing an opportunity for up to six diners to watch Close at work. Visually stunning, seasonal dishes include the likes of dehydrated Jerusalem artichoke crisp with offal, and wagyu fillet tartare. The robust wine list features vibrant, biodynamic choices.
