Claude Bosi at Bibendum
London, UK
A long-time mecca for fine French dining in London (opened by Sir Terence Conran and Paul Hamlyn in 1987, with Simon Hopkinson behind the stove), star chef Claude Bosi breathed fresh life into the offering in 2017, his audaciously rich haute cuisine proving a perfect fit. The light-bathed first-floor dining room – housed in the historic original UK headquarters for the Michelin Tyre Company – boasts a giant stained-glass depiction of Bibendum himself (more commonly known as the Michelin Man), with well-spaced tables and attentive service. The exquisite menus yield the likes of veal sweetbread, Brittany rabbit and ‘My mum’s tripe and cuttlefish gratin’, all of them cooked with trademark precision and panache.
