Meet London’s only restaurant without a bin. After beginning its life in Brighton, Silo reopened its doors to East London in 2019, touting itself as ‘the world’s first zero waste restaurant.’ Chef Douglas McMaster’s planet-forward vision is manifest throughout every detail of the restaurant. Across the menu, courses like the ‘Quaver’ are made with a cracker – where any offcuts are ground back down and used in the next batch – topped with goats cheese and a treacle made from reduced vegetable scraps. A wild rabbit dumpling, topped with vegetable XO sauce, uses leftover sourdough as its wrapper. The whole menu will often shift daily, depending on what the local forager –  often referred to by name by the restaurant staff – brings into the restaurant each morning. 

Before leaving, make sure to stop by the fermentation area to witness the magic in action where you’ll find vats of garums and other concoctions comprising recycled produce at different stages of their life cycles.
