Sheffield, UK
Look for the neon sign at the Sheffield Town Hall and descend the stairs into a liquid underworld. The neat little bar is tucked away in what was once a public toilet (you’d never know), and the speakeasy edge isn’t lost on punters. It’s a sleek neo-industrial set up with navy booths and turquoise stools sitting happily against rose-pink tilework and a Bristol-green bar. Split into five rolling concepts, drinks are tethered to the locale and driven by seasonal produce. Case in point: Public Holiday’s Chipping Forecast with Dandelion Ketel One, burdock, Sheffield honey and elderflower vinegar. Infusions, washes and a zero-waste ethos provide further backbone. For nibbles, think cheese toasties and “bit of everything” platters starring Yorkshire bresola, and small plates in collab with new-wave regional chefs. Background noise comes courtesy of a vinyl-only policy – the records have even been given their own spot on the back bar.
