A farm, restaurant and five-bedroom inn, Kyle and Katina Connaughton’s SingleThread brings the old-world traditions and hospitality of ancient Japan to the heart of Northern Californian’s wine country. Kyle Connaughton, who has spent time in Japan, as well as a six-year spell at Heston Blumenthal’s The Fat Duck, shapes his 10-course kaiseki-inspired tasting menu around rare Japanese fruits and vegetables grown by wife – and head farmer – Katina on the nearby farm, with vegetarian, pescatarian and omnivore options. Lucky guests staying overnight are treated to a slap-up in-room breakfast, which makes use of the area’s best seasonal ingredients.
