Opened in 2021 to excited acclaim by reviewers in New York and around the world, Dhamaka is the third offering in the city from restaurateur Roni Muzamdar and chef Chintan Pandya. Situated in the hot spot that is Essex Market on the Lower East Side, Dhamaka takes customers on a gastronomic journey to provincial and rural India unchartered by most New Yorkers. The name – meaning ‘explosion’ – refers to both the tasting experience and to pastures new in terms of Indian cuisine. Forget chicken tikka masala and instead embrace goat neck dum biryani or its snack cousin gurda kapoora (goat kidney and testicles). They call it ‘unapologetic Indian’ but who needs to apologise when it tastes this good? House-made paneer methi in a wickedly creamy cashew sauce, as well as champaran meat cooked with an entire bulb of garlic, are just two dishes that demonstrate the kitchen’s subtle and complex understanding of spices. Those spices can pack some heat, but cooling mango lassi provides a delicious antidote.
