Scotch Lodge owner Tommy Klus has long been entrenched in Portland, Oregon's whisky scene: he curated the vast collection at Multnomah Whiskey Library before opening this comfortable-yet-unconventional drinking den in 2019. Scotch Lodge has a similarly impressive (albeit a bit smaller) bottle selection, with some rare collector's items that will make the most stoic aficionados swoon. But unlike other whisky bars where the reserved spirit is religiously served neat or on the rocks, Klus uses his whiskies in inventive cocktails as well, defying traditional boozy and stirred conventions by shaking it with citrus, working it into tropical cocktails and other smart reimaginings. Try the house signature, the Scotch Lodge, made with whisky, combier rouge, cynar, Punt e Mes and a dash of bitters.
