Pasjoli is the posterchild for new-wave haute cuisine. On the one hand, chef Dave Beran’s food is so utterly French you might find yourself exalting ‘Mon Dieu’ as you dine; on the other, your meal plays out within the on-trend confines of an industrial-chic space on Santa Monica’s main drag. A finely balanced storyboard of edge and elegance, the decor flits from exposed piping, pot plants and brick walls to a gilded marble bar and silk wallpaper, moving from big and airy, to intimate and cosy in the same breath. Similarly, the food translates to classic French form brought bang up to date for the modern diner with Californian produce and creative flair. Beran is famous for his canard à la presse, which sees blushing roast duck sliced tableside before being crafted into three singular plates – salad with crisp skin, duck leg bread pudding and breast with a sauce theatrically compressed using an antique press found housed like a trophy on its own table by the pass. You need to pre-order, but it’s a fantastic homage to French greats like Escoffier. Perfectly executed butter-poached fish, steak au poivre, decadent foie de poulet à la Strasbourgeoise and perfect chocolate soufflé are further delights.
