At Talea, Italian chef Antonia Guida has entrusted his protégé Luigi Stinga to execute his "cucina di famiglia", or family-style cuisine, menu to Emirates Palace Mandarin Oriental in Abu Dhabi. For a fresh taste of Italy, bread is baked daily, pasta made from scratch, and cheese made in-house. Chefs pluck fresh herbs and vegetables from the kitchen garden for dishes such as Stinga's fettucine all Nerano, made with zucchini, Parmesan and basil, or the pan-fried sweetbreads with the flavour-packed Piedmontese bagna cauda and garden vegetables, which shows off Stinga's flair for beautifully-balanced homespun recipes. Pro tip: don't miss the handmade orecchiette, swirled with slow-cooked Genovese beef sauce, best paired with jaw-dropping terrace views of the Arabian Gulf.
