Three by Eva
Dubai, United Arab Emirates
Three really is the magic number at Three by Eva. The family-owned restaurant is headed up by Jordanian chef Eva Halasa and her two daughters, Emilie and Lilian Rihani, and is rooted in a philosophy committed to simplicity and tradition, such as the three ingredients (flour, water, and salt) that make up the rustic sourdough bread that Emilie bakes in the kitchen. Lilian has overseen design and reimagined a restored villa in Jumeirah, not only as a family restaurant, but with the vibe of a family home. Eva and Emilie take care of the food, putting contemporary riffs on dishes inspired by the trio’s Bedouin roots. Case in point the feta brûlée, a traditional marriage of feta, dates and thyme which has been given a Three by Eva twist by caramelising the feta to a sweet, crackled crisp. Although the breakfast and lunch dishes are big hitters, the restaurant is open until midnight with all day dining, so don’t book just for brunch.
