Fauna has been on a meteoric rise to fame since opening in 2017. It won the One To Watch Award as part of Latin America’s 50 Best Restaurants 2020, before rising to the No.5 spot in the 2024 ranking. Of course, the dynamic Mexican fare from chef David Castro Hussong and pastry chef Maribel Aldaco Silva is a huge part of the appeal, but the enchanting setting can’t be ignored. Virgilio Martínez and Pía León are the masterminds behind Central, The World’s Best Restaurant 2023. But away from the Peruvian capital in the heart of the Andes, the duo also oversees Mil: a restaurant platforming indigenous Andean ingredients harvested by rural communities from the surrounding peaks. The magic of the restaurant experience begins with the ascent up the winding mountain track to 3,500 metres above sea level, after which diners are treated to an eight-course tasting menu overlooking ancient agricultural ruins.

Tucked away in a valley in New Zealand’s South Island, travelling to Amisfield Winery and Restaurant feels like stepping into the world of JRR Tolkien’s The Lord of the Rings. The dining experience takes place in a weathered stone building at the heart of the surrounding 200-acre vineyard, where you’ll find hometown hero Vaughan Mabee in the kitchen.
