A collaboration between the Mandarin Oriental Hotel and Hong Kong F&B group Maximal Concepts, The Aubrey is an eccentric Japanese izakaya boasting expansive views of Victoria Harbour from the hotel’s 25th floor. The bar is easy on the eye too, punctuated with plush vintage furniture accented by forest green, quirky knick knacks and beautiful lamps.
Led by the ever-charming and dapper Devender Seghal, a bar legend who embodies true hospitality, The Aubrey serves up excellently crafted Japanese libations. Think Japanese whiskies, awamoris and shochu to create drinks such as the Mizu No Kuni with banana, sweet potato shochu, jasmine and rice shochu, or a seasonal creation such as a Merone, made with cantaloupe, awamori, mezcal, ancho, citrus and bitters.
Overwhelmed by choice? Five guests per sitting can embark on the bar’s signature omakase cocktail experience in an intimate room secluded away from the main izakaya space. Within the two-hour experience, Sehgal will create a highly personalised experience catered to each individual’s tastes.
