Harking back to the 1950s and drawing on the iconic bars of Europe, Melbourne’s Apollo Inn provides an elevated, intimate cocktail experience. Taking its name from the public house that once occupied neighbouring venue Gimlet at Cavendish House, the bar is located within a 1920s neo-renaissance-style building. Beyond its low-key entrance lies a warmly-lit, welcoming space with a central bar and elongated banquette seating. The cocktail list brings the bar’s influences together seamlessly, with a list of classic drinks brought up to date, such as a Deluxe French 75 with neroli and vintage champagne, or the bar’s take on the classic French serve, the Picon Bière. Very much a spot for martini lovers too, the Apollo offers these in four styles, namely Dry, Dirty, Gibson and Café. The wine list, meanwhile, draws on Gimlet’s substantial cellar and there’s a small selection of small dishes to accompany too.
